The Best Banana Bread Recipe...

Ok it's a big call... 'The Best'... but seriously I've tried ALOT of Banana Bread (especially through those pregnant days!).  This little beauty is moist (not oily), full of favour and if your lucky to have any left the next day, tastes even better. 

I was lucky to get the photo you see above before it was three quarters gone and all but two chocolate melts left (by the way the chocolate is optional, I just put them on top for the kids). It's a pretty no fuss and quick recipe, a great option for an afternoon snack.
BANANA BREAD RECIPE
Ingredients 
3 mashed ripe bananas  1 cup plain flour 1 egg 1/4 cup coconut oil (liquid-state) 1/4 cup sour cream 1/2 cup brown sugar 1/4 cup caster sugar 2 tsp vanilla extract 1/2 tsp baking powder 1/2 tsp bicarbonate of soda pinch of salt
Method 
Preheat oven to 160 degrees (fan-forced)
Prepare a loaf pan, with baking paper and set aside.

Weaving Lessons

Today Was Just A Good Day....

Celebrating my day through photographs. 
It was a super fun day, just the little lady and I. We've been stuck around the house either because of the rain or it's just been to stinking Hot!! So we took our chances with the weather and snuck away up the coast, to a beautiful spot I hold very dear to my heart (Norah Head), a lot of memories from my childhood at this place. 
My little lady had been itching to explore the Lighthouse and so had I. Today was our lucky day, we hopped on a guided tour and it did not disappoint. Beautiful inside and out. 
We then headed down the stairs on our adventure (as she was calling it) for a walk on the rocks. 
Loved just spending the time one on one with Alba. She starts school in under two weeks, so I know these days are pretty special.

Buttery Shortbread Topped With Jam Recipe...

This easy shortbread recipe was past down to me. With just four ingredients and 20 minutes you'll have these perfectly sweet little buttery biscuits. A great quick dessert to take to any special occasion.

You will need;
250g Butter 2 Tbsp Castor Sugar 2 Cups Plain Flour (Strawberry Jam or Lemon Curd to serve) Mini cupcake patty cases
Pre-heat oven to 180 degrees (fan-forced).
Using an electric mixer beat butter and sugar until creamy and pale.  Fold in one cup of flour, mix, then add the remaining cup of flour. On a baking tray layout your patty cases, then spoon a teaspoon size ball (not rolled), into  each patty case.  Bake for 20mins (or until very lightly browned).
Allow to cool then top with jam and dust with icing sugar (optional) to serve.
