The Best Banana Bread Recipe...

Ok it's a big call... 'The Best'... but seriously I've tried ALOT of Banana Bread (especially through those pregnant days!).  This little beauty is moist (not oily), full of favour and if your lucky to have any left the next day, tastes even better. 

I was lucky to get the photo you see above before it was three quarters gone and all but two chocolate melts left (by the way the chocolate is optional, I just put them on top for the kids). It's a pretty no fuss and quick recipe, a great option for an afternoon snack.

BANANA BREAD RECIPE

Ingredients 

3 mashed ripe bananas 
1 cup plain flour
1 egg
1/4 cup coconut oil (liquid-state)
1/4 cup sour cream
1/2 cup brown sugar
1/4 cup caster sugar
2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
pinch of salt

Method 

Preheat oven to 160 degrees (fan-forced)

Prepare a loaf pan, with baking paper and set aside.

(I used my kitchenAid mixer, but a bowl and wooden spoon is perfect) 

1. In a large bowl, add the egg, sugars, coconut oil, sour cream, vanilla and mix to combine.

2. Add the mashed bananas, then stir to combine.

3. Add to the cup of flour the baking powder, bicarbonate soda, salt. Then add gradually to the banana mixture. Mix until just combined (don't over do it).

4. Place mixture into prepared pan. (Optional - You can add chocolate chips or melts to the top now).

5. Place in the oven for 40-50mins, until golden brown on top and a knife inserted comes out clean, no batter but maybe a few crumbs. 

6. Allow to cool in pan for 5 minutes. Then turn out to either cool completely or eat straight away while still warm.

Weaving Lessons

Hi Guys
Recently I've had a few enquiries from people wishing to do Weaving Lessons with me. Here are some details below for one-on-one lessons I'm holding at Greta's Handcraft Centre in Lindfield (also available on the Central Coast).

Celebrating my day through photographs. 

It was a super fun day, just the little lady and I. We've been stuck around the house either because of the rain or it's just been to stinking Hot!! So we took our chances with the weather and snuck away up the coast, to a beautiful spot I hold very dear to my heart (Norah Head), a lot of memories from my childhood at this place. 

My little lady had been itching to explore the Lighthouse and so had I. Today was our lucky day, we hopped on a guided tour and it did not disappoint. Beautiful inside and out. 

We then headed down the stairs on our adventure (as she was calling it) for a walk on the rocks. 

Loved just spending the time one on one with Alba. She starts school in under two weeks, so I know these days are pretty special.
